Sydney’s The Dolphin Lodge is ready to host a one-month pop-up in collaboration with Campari, aptly named Bar Purple.
The foundational liqueur is taking up the venue from 20 September till 22 October with a Negroni-themed fit-out in addition to a drinks checklist stuffed with ‘Newgronis’ aka riffs on the enduring cocktail.
“Campari and Negronis have all the time been my favorite drink,” says Bars Director Josh Reynolds.
“Campari makes the Negroni, nothing can match up. For its flavour to be so intense and to see it in so many old skool classics, it’s a pleasure to work with.”
Reynolds has been growing drinks together with the London Ardour Week that sees passionfruit ice cream mixed with white Campari; the Raspberry Beret with freeze-dried raspberries and raspberry Eau De Vie; the Black Truffle & Cacao husk with white chocolate; and a tiramisu quantity made with Mr Black and low ice cream from Gelato Messina.
“The reasoning behind the 4 twists on the basic Negroni is because of …seasonality, breaking boundaries, tongue-in-cheek serves, mixing Italian stalwarts just like the tiramisu dessert, and reimagining these flavours in a Negroni with nice approach,” says Reynolds.
Govt Chef Danny Corbett is behind the meals menu that’s chanelling bites you’d discover in Northern Italy – suppose fritto misto, lamb shoulder with verde sauce, and carbonara.
Bar Purple can even run a bang-for-your-buck aperitivo hour day by day from 4-6pm, with drinks beginning at $8 and snacks from $6.
The pop-up will run from 4pm till late for walk-ins solely.
