Tom Shepherd is excited to announce the appointment of Michael Blades as the new Head Chef at Upstairs by Tom Shepherd, the only Michelin-starred restaurant in Lichfield, Staffordshire. Mike and Tom have shared a professional bond for over 11 years, and Mike played a vital role as Sous Chef during the opening of Upstairs in 2021. His culinary journey began as a Commis Chef at the two Michelin-starred Restaurant Sat Bains, followed by a stint at Adams in Birmingham, where he worked alongside Tom, first as Chef de Partie and later as Junior Sous Chef. After some travel during the pandemic while Tom established Upstairs, they collaborated on the successful Dine at Home Boxes before the restaurant officially opened in October 2021.
This promotion is part of Tom’s strategic vision to expand, which includes plans for a second, more casual restaurant and bar, alongside his ongoing projects with Experiences by Wembley Stadium, where he manages culinary offerings during England games at the Bobby Moore Lounge. He is also involved with high-profile events such as Royal Ascot and Wimbledon.
As Head Chef, Mike will lead a team of ten in the kitchen at Upstairs, managing 40 covers and continuing to highlight the restaurant’s signature dishes, including Orkney Scallop with peanut satay, radish, and coriander; Herefordshire Beef with garlic, tarragon, onion, and smoke; and the Great British Menu favorite, ‘No Ordinary Schoolboy’ featuring banana, rum, and caramel.
